Bowl-first.

Rikyu — The entry bowl. Classical thin-whisk in the most generous tin.

Hikari — The thick-bowl grade. Shaded, fine-ground, slow.

Not for your first ceremonial bowl, and not for milk. Koicha is unforgiving of an imperfect pour if you haven't had ceremonial matcha before — start with Wakaba or Rikyu and work up to this.

Wakaba — Early-summer brightness. Vegetal, quick, everyday.

Not the grade for a slow, meditative bowl on its own — it's built to hold up inside a latte or a bake, not to be the star of a quiet pour. Reach for Rikyu or Hikari for that.

Muyu — The top Uji-sealed tin. Holds its edge under oat and whole milk.

Not for a straight bowl — it's built for company (milk), not to be drunk alone the way Rikyu or Hikari are. A usucha purist will find it one-dimensional without milk.
